* SCRAMBLED EGGS, SALMON & DILL

Preparation Time: 5 Minutes
1 slice Ciabatta bread
1 Tbsp low fat milk
1 Tbsp cottage cheese
2 Tsp finely chopped dill
Freshly cracked black pepper (to taste)
2 Tbsp sliced smoked salmon
Toast the slice of Ciabatta & keep warm. Heat a non stick frying pan over medium heat. Using a whisk briskly mix eggs, milk, cottage cheese & black pepper together until a smooth mixture is formed. Spray the frying pan with olive oil spray & add mixture to the pan. Using a whisk, stir egg mixture constantly over medium heat until it thickens & is a light creamy colour, which should take about 2 minutes. Place salmon in with egg mixture & lightly mix in. Spoon scrambled egg on top of toasted Ciabatta slice, garnish with dill & serve immediately.
Feel free to replace the Dill with Chives.
