CHICKEN NAPOLI RISOTTOServing Size: Serves 1 - 2 Preparation Time: 20 minutes Ingredients:250g diced chicken breast 250g jar of preferred brand Napoli sauce 4 small pieces of cauliflower 4 small pieces broccoli 1 small onion 1 clove of garlic 1 small carrot 150g arborio rice 1L chicken stock Dash of olive oil Salt and pepper Shavings of parmesan cheese Method:In a saucepan bring chicken stock to the boil, add napoli sauce and season with salt and pepper. In a hot pan saute chicken, vegetables and garlic. Once chicken is slightly browned and veggies are cooked to desired texture, add rice and cook slowly for a few minutes. Slowly pour in chicken stock and set on a low simmer. Regularly stir the mixture - once all liquid has been absorbed the dish is ready to serve. Garnish with shavings of parmesan cheese.
